Stay Chill with Wine Cocktails!
Nothing says summer quite like a refreshing wine cocktail. Whether you're relaxing on the patio, hosting friends, or looking to try something new with your favourite Henry of Pelham wines, these easy-to-make cocktails are perfect for warm-weather sipping. From sparkling twists to Niagara-inspired classics, here are a few recipes to keep cool all season long.
Sauvignon Blanc Margarita Spritz
Bright, citrusy, and with just a hint of heat, this refreshing cocktail was created by our Retail Manager, Olivia Reid, and quickly became a guest favourite at our Boots n' Benchlands event. Crisp Sauvignon Blanc and zesty margarita flavours come together for the ultimate summer refresher.
INGREDIENTS
- 1 bottle chilled Henry of Pelham Classic Sauvignon Blanc
- 1 bottle margarita mix
- 1 fresh jalapeño, thinly sliced
- 1 fresh lime, thinly sliced
- Sparkling water or club soda
- Ice (about 5 cubes per glass)
- Garnish: jalapeño wheels
INSTRUCTIONS
- Slice the lime and jalapeño, removing the seeds from the jalapeño.
- Fill each glass with ice and add ½ cup margarita mix and ½ cup Sauvignon Blanc.
- Top with sparkling water, add the lime and jalapeño slices, stir gently, and serve immediately.
Tropical Riesling Cobbler
A tropical take on a classic wine cobbler, this cocktail combines fresh pineapple, a touch of smoky mezcal, and the bright fruit character of our Classic Riesling. Created by Monica Carbonell of Liquiculture, it's a delicious balance of sweet, citrusy, and refreshing flavours.
INGREDIENTS
- 3 oz chilled Henry of Pelham Classic Riesling
- 1 oz honey syrup
- ⅔ oz pineapple juice
- ⅓ oz mezcal
- ½ oz lemon juice
INSTRUCTIONS
- Add all ingredients to a cocktail shaker with a handful of ice.
- Shake briefly until chilled.
- Strain over cracked ice and garnish with a pineapple wedge.
To make honey syrup: Stir together equal parts honey and boiled water until combined.
Cuvée Cup
If you love a Mint Julep, you'll want to try this sparkling variation from Liquiculture. Featuring our Cuvée Catharine Brut, fresh mint, and a touch of sweetness, the Cuvée Cup is elegant, refreshing, and made for sunny afternoons.
INGREDIENTS
- 3 oz Cuvée Catharine Brut
- 5 sprigs mint, leaves removed from stems (reserve one sprig for garnish)
- ⅓ oz rich simple syrup (2:1)
INSTRUCTIONS
- Gently muddle the mint leaves in a julep tin or cocktail glass.
- Add the Cuvée Catharine Brut and rich simple syrup.
- Fill the vessel three-quarters full with crushed ice and stir until combined.
- Top with additional crushed ice and garnish with the remaining mint sprig.
New York Sour
Give a timeless cocktail a Niagara twist with a New York Sour featuring Henry of Pelham Baco Noir. This variation comes from James Peden, Head Sommelier at Treadwell Cuisine in Niagara-on-the-Lake, who loves the way Baco Noir complements the rich character of whisky. Recipe here.
The result is a beautifully balanced cocktail with layers of citrus, oak, and ripe berry flavours.
INGREDIENTS
- 1½ oz whisky
- 1 oz fresh lemon juice
- 1 oz turbinado syrup
- 1 oz fresh egg white
- ½ oz Henry of Pelham Classic Baco Noir
- Long lemon twist, for garnish
INSTRUCTIONS
- Add the whisky, lemon juice, turbinado syrup, and egg white to a cocktail shaker.
- Fill with ice and shake vigorously until chilled and frothy.
- Strain into a rocks glass filled with fresh ice.
- Slowly pour the Baco Noir over the back of a spoon to create a float on top of the cocktail.
- Garnish with a long lemon twist and serve immediately.

Intimate spaces for special occasions
Henry of Pelham offers several spaces for formal and informal events and meetings, with room for up to 30 people. We've helped host anniversaries, office parties, showers, birthdays, annual general meetings and more. Our light-filled ballroom, which is also a beautiful gallery space featuring work from Canadian artists, is a bright venue for daytime events and an elegant room to host evening gatherings. Our barrel cellar is a cool retreat from the summer heat and cozy space for fall and winter events for smaller groups. Catering is available from the Coach House Café.
And with anything from Henry's wine list available to event organizers, the drinks are guaranteed to be crowd-pleasers.
