
Flavours of the Biosphere
Chef John Cirillo and the Niagara Escarpment Biosphere Reserve recently collaborated on a multimedia project about the Niagara Escarpment.
The production was filmed across the entire span of the Niagara Escarpment – 725 km from Queenston to Tobermory – and on location at Cirillo’s Culinary Academy in the Village of Islington. The project, entitled Flavours of the Biosphere, features the foods of the escarpment and the nearby Holland Marsh – both part of Ontario’s Greenbelt – as interpreted by Chef Cirillo.
The production is scheduled for broadcast via the internet beginning in May.
